Six refreshing summer mojitos in Chicago

On a hot July day, there’s nothing quite like a mojito to help you channel those summer vacation vibes. In and around Chicago, there are plenty of restaurants, bars and lounges serving their own unique version of the classic Cuban beverage.
From watermelon, mango and blackberry to the ever trendy Fernet Branca, the mojito customizations are seemingly endless.
The Mentajito
The Mentajito mixes together Fernet Branca Menta, dry rum, lime, soda, and fresh mint. “Menta” is a fernet variation that is enhanced with mint oil.This mint focus serves as an excellent twist on an otherwise classic Mojito.
Rumor has it that this cocktail was produced partially in honor of opera singer Maria Callas, who was known to drink Fernet with mint before her performances.

Watermelon Mojito
Las Palmas’ collection of signature cocktails contains plenty of gems, but we had to show some love to the watermelon mojito. This refreshing pink beverage consists of white rum, Xtabentun anise, honey liqueur, muddled mint, watermelon, freshly squeezed lime juice and a splash of club soda.

Beverage Director Dylan Stewart has created a version that mixes together Denizen 3 Year White Rum, fresh lime juice, mint, as well as Angostura bitters to give the drink a unique orange glow to set it apart from the pack.
